Harvesting, Processing and Storage
The harvest starts in October, when the olives, still green, give the best in quality and the organoleptic
properties are at it’s highest. By doing so, the oil yields less in terms of quantity but much more in terms of quality..
During the harvest, each day, the olives are placed in specific areated crates and at the end of the day delivered to the Mill to be processed by continuous cold extraction.
The produce is then stabilized by mechanical micro filtration and stored in steel tanks in a nitrogen atmosphere; this procedure helps to protect the oil from phenomena that might damage the quality, such as fermentation and oxidation.
This allows us to guarantee an outstanding product, able to preserve all the beneficial properties and superb flavour of the fruit.
